Every update for the year — new features and fixes as they ship, the same builds this server runs. Plus license activation and the download servers your instance pulls from. Self-hosted doesn't mean self-sufficient; my side keeps that running, and that infrastructure isn't free for me either. It's the price of keeping it working, not a license fee for the software.
Straight answer: your server stops starting. The license is checked every six hours, with warnings for the last two weeks before it expires. Your data is untouched — it's your machine and your database — but the app won't run until you renew. Renew and it comes straight back up.
Your server keeps running for 72 hours if my license service is unreachable. My outage shouldn't take your server down with it.
